The "o" in o'clock is a contraction of "of the."
It comes from the older phrase "of the clock" (or "of the clokke" in Middle English), meaning "according to the clock." People started saying this in the late 1300s after mechanical clocks became common, to distinguish clock time from sundials or other methods. Over time it shortened to o'clock.
