This year I’m going to create my own hand-written cookbook. Partly as an experiment to document what works and what doesn’t. But also something to hand to my kids as a family heirloom.

My favourite hot take is that the view must be rubbish, so the chef has to focus on the quality of food to keep patrons coming. What to look for in a restaurant | Financial Times ft.com/content/2abcc482-c61f…

Interesting take on "umami" from @adamliaw Why is it so hard to understand when it is so fundamental to being a human being?
Replying to @adamliaw
Umami is the most misunderstood taste, but it actually is the most human taste of all. We evolved a taste for umami basically to teach us to cook. Cooking, drying and fermenting is good for us because it keeps food safe, makes it more bioavailable, and populates our gut bacteria.
Had to replace my meat thermometer recently. My minimum requirements: Digital (obviously) Celsius and Farenheit Long metal wire probe Alarm for when it reaches temperature
