Pineapple Banana Bread with Almonds
Ingredients (1 standard loaf)
Dry Ingredients
- 2 cups (250 g) all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon (optional)
Wet Ingredients
- 1½ cups mashed ripe bananas (about 3 medium bananas)
- 1 cup crushed pineapple, lightly drained
- ¾ cup brown sugar
- 2 large eggs
- ⅓ cup vegetable oil or melted butter
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
Topping
- ⅓ cup sliced almonds
- ¼ cup pineapple pieces
- 2 tbsp shredded coconut (optional)
Instructions
1. Preheat oven to 175°C (350°F). Grease and line a 9 × 5-inch loaf pan.
2. Combine flour, baking powder, baking soda, salt and cinnamon in a bowl.
3. In another bowl, whisk mashed bananas, pineapple, sugar, eggs, oil and extracts.
4. Fold the wet ingredients into the dry ingredients until just combined. Avoid overmixing.
5. Pour the batter into the prepared loaf pan. Top with sliced almonds and pineapple pieces.
6. Bake for 55–70 minutes, or until a skewer inserted into the centre comes out clean.
7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

- Use very ripe bananas for natural sweetness and better flavour.
- Lightly drain the pineapple to prevent excess moisture.
- Toast the almonds lightly for enhanced flavour and crunch.
- Cover loosely with foil if the top browns too quickly.

Entre las nueve personas que perdieron la vida el domingo 1 de noviembre, cuando un avión privado Learjet 60 se estrelló en el condado de Palm Beach, Florida, se encontraba el empresario tecnológico Adam Robinson, de 44 años, su esposa Helen Sharp, sus dos hijos pequeños, de 4 y 2 años, la niñera de la familia y dos amigas cercanas.
Las víctimas fueron identificadas como Adam Robinson, Helen Sharp, sus hijos Emma y Charlie, sus amigas Rachael Reed y Charmi Fehr, y la niñera Anita Maria Cetina.
También fallecieron los dos miembros de la tripulación: el capitán Jeff Gregory, de 55 años, y la copiloto Nathalia Gadelha Filgueiras, de apenas 20 años.
El avión había despegado de Austin, Texas, con destino a North Eleuthera, en Bahamas, cuando se precipitó sobre una zona residencial de Florida, provocando una enorme explosión.

Cheesy Onion Rings
Ingredients:
- 1 large onion, sliced into thick rings
- 8 mozzarella cheese sticks
- 1 cup milk
- 1 egg, beaten
- 1 cup Panko bread crumbs
- 2 cups cooking oil
- Toothpicks for securing
- 1 teaspoon baking powder
- 1 cup all-purpose flour
- 1 teaspoon fine salt
Instructions:
1. Prepare onion and cheese: Pair two slices of onion rings - one larger than the other with space between them when the smaller is placed inside the larger. Slice mozzarella cheese to fit the space between the rings. Place cheese between the onion pieces and secure with a toothpick.
2. Heat oil and prepare dry mix: Heat oil in a deep cooking pot. Combine all dry ingredients (flour, baking powder, salt) in a bowl and mix well. Dredge all onion rings in the dry mixture and place on a wire rack.
3. Make batter: Combine milk and beaten egg, mix well. Pour this mixture into the bowl with remaining dry ingredients and mix until a batter is formed.
4. Coat onion rings: Dip the onion rings in the batter mixture, then place back on the wire rack to let excess batter drip. Coat with Panko breadcrumbs.
5. Fry until golden: Fry one side until golden brown, then turn over and fry the opposite side until golden brown.
6. Serve: Remove toothpicks and serve warm with marinara sauce. Share and enjoy!
