I’m trying to come to terms with the implications that artificial intelligence is capable of creating art that actually resonates at a human level. Ian McAndrew passed away this week at 74, after more than fifty years in hospitality. He was the youngest chef in Britain to lead a restaurant to a Michelin star, he mentored Phil Vickery, Michael Deane, and Paul Kitching, and he changed the course of careers simply by showing what was possible. Phil Howard saved up as a student to eat at Restaurant 74 in Canterbury and walked out knowing he wanted to be a chef. That is the measure of a life in this industry. This coverage of the Katie Taylor fight, oh RTÉ, man... are they ever doing her a disservice? It's one of the worst things I've ever seen. They're so obviously milking it for the ad revenue, which wouldn't be so bad if they put a modicum of effort into the content. I know it's a lot of time to fill and it's easier said than done, but they couldn't have gone an easier route if they tried. The handful of people they have talking are being worked to the point of exhaustion. How many times can you expect the same three people to keep the same talking points warm, over and over again? Embarrassing.

Who stands out as the best fine dining chef you know? Someone who, perhaps hasn't yet made the step up to Head Chef already? Not the most creative one, not the one with the loudest reputation.
