I've been researching what makes truly great chicken for months. Get ready for some data tables.
Chicken is the most consumed meat in the United States, yet most Americans know little about what they're eating. While many consumers can debate the merits of grass-fed vs grain-fed beef and distinguish between Angus and Wagyu breeds, few can identify Cornish Cross vs Color Yield chicken or explain the pros and cons of soy-free feed.
So what should consumers look for when sourcing chicken? The 5 most important factors are:
- Diet: Organic traceable feed complemented by forage and organic farm scraps
- Lifestyle: Raised outdoors in a biodiverse ecosystem
- Breed: A slow-growth breed like a Pioneer or Freedom Ranger
- Age: Harvested at 8-10 weeks to allow the chickens to develop strong bones and a healthy immune system that support muscle growth, nutrition, and flavor
- Processing: Air-chilled after harvest rather than water-chilled
Read the full Radius Guide to Better Chicken to learn more about each factor, and why we decided to partner with a local farmer to raise a chicken breed specifically for Radius. Link in thread.
A brief December recap because…drum roll please…we plan to open in late January! And there’s a lot to do :) Check out the full post for updates on construction, sourcing, hiring, and our upcoming YouTube series.

- World-class design and branding
- Uncompromising product sourcing
- Engaging educational content
- A bunch more that we're working on too

From jungle bird to commodity — how 7,000+ years of selective breeding made modern chicken, and why it has gone too far. So far that even Burger King, Papa Johns, and Popeyes plan to stop sourcing the most common commodity chicken breed.
A brief history of industrial chicken 🧵
While the efficiency of chicken production over the last hundred years has been a modern miracle to increase yield and reduce prices, we think it has gone too far at the expense of animal welfare, nutrient density, and flavor.
At Radius we put a lot of effort into researching and sourcing the most nutritious and delicious products for our grocery store. For chicken, we want birds that are closer in genetics, lifestyle, and diet to their domesticated ancestors.
