Cutting saturated fat is not how you manage blood sugar. Cutting carbs is, and the American Diabetes Association has said so in writing since 2019. From the ADA's own nutrition consensus report: "Reducing overall carbohydrate intake for individuals with diabetes has demonstrated the most evidence for improving glycemia." The same report says: "No randomized trials were found in people with type 2 diabetes that varied the saturated fat content of the low- or very low-carbohydrate eating patterns to examine effects on glycemia, CVD risk factors, or clinical events." So the ADA could not find one randomized trial in type 2 diabetes that changed saturated fat inside a low-carb diet and measured blood sugar. Yet saturated fat gets thrown into a blood sugar headline right next to carbs, as if they do the same thing. They do not. Butter, eggs and steak do not spike blood sugar the way bread and crackers do. Putting fat fear in a diabetes headline keeps people eating the foods that cause the problem. If blood sugar is your worry, cut the carbs, eat real protein and fat, and ask your doctor for a fasting insulin test. Hyperinsulinemia shows up years before your glucose does.
